Meat loaf is a comfort food. It’s popular because it’s appetising and versatile. It can be served hot for dinner with mashed or roasted potatoes, then next day cold slices can be incorporated into lunch box menus. It’s also a favourite for picnics served with lashings of chutneys and pickles.
For parents with small children, meat loaf has everything you need and the kids get their vegetables too and they do not even know they are eating vegetables.

INGREDIENTS
- 1 envelope Lipton® Recipe Secrets® Onion Soup Mix
- 1 lb. lean ground beef
- 1 lb. lean ground chicken
- 1/2 cup plain dry bread crumbs
- 2 eggs
- 1/2 cup milk
- 2/3 cup finely chopped carrot
- 2/3 cup finely chopped celery
- 2/3 cup finely chopped onion
- 1/3 cup Barilla Basilico Sauce or any tomato sauce
- 1/4 cup Muir Glen Organic Ketchup or any tomato ketchup
DIRECTIONS
- Preheat oven to 350°. Combine all ingredients in large bowl.
- Shape into loaf in 1.5 lb. loaf pan, 10″L × 5″W × 2¾”D loaf pan.
- Brushing twice with ketchup during baking.
- Bake uncovered 1 hour or until instant-read thermometer registers 160 degrees.
- Let meat loaf rest 10 minutes before slicing and serving.
